Composting and anaerobic digestion are often grouped together because both can keep food scraps out of landfills. They are not the same process. Composting uses oxygen to create a stable soil amendment. Anaerobic digestion takes place without oxygen in enclosed equipment and produces biogas plus a remaining material called digestate. The better option depends on the feedstock, infrastructure, and intended use.

Composting is an aerobic process

In a compost pile or facility, microorganisms need carbon, nitrogen, moisture, and oxygen. Operators manage the mix, airflow, temperature, and time until the material becomes biologically stable. Finished compost can support soil health, plant growth, erosion control, and water management when used appropriately.

Anaerobic digestion happens without oxygen

A digester is a sealed system where microorganisms break down organic material in stages. The process releases biogas containing methane and carbon dioxide. Because the equipment captures the gas, it can be cleaned or used to produce heat, electricity, or fuel instead of escaping uncontrolled.

The outputs are different

Compost is the finished product of aerobic composting. A residential dehydrator or the material directly leaving an anaerobic digester is not compost. Digestate may be separated, treated, composted further, or managed for another beneficial use depending on its quality and local requirements.

Accepted materials depend on the facility

Commercial systems may accept meat, dairy, and cooked food that are difficult in a backyard pile. That does not mean every composter or digester accepts the same list. Packaging, produce stickers, glass, and metal remain contaminants. Participants should follow the destination’s instructions.

Prevention still ranks higher

Neither process justifies wasting edible food. The EPA’s Wasted Food Scale prioritizes prevention, donation, and pathways that preserve food for people before organics recycling. Composting and digestion are valuable for material that cannot reasonably be eaten.
